RICH DARK WOOD - Whereas maple is a blonde color - our butcher block is a natural dark walnut wood. Finished with food safe oils, not stained or varnished or chemically treated like the other guys. Not at wood are the same - this is why you would never see a cutting board made from pine, or cedar, or oak. Walnut is a hardwood that has the perfect hardiness rating for maximal durability and longevity, but not so hard that it's hard on your knives.
